Personalize Extra Fields

I need to change the extra fields of K2: insted of "director" "writer" "stars" I have to write other things. Where do I have to change this?
I also don't need the "Rate this item" function. Wher do I switch that off?

"director" "writer" "stars" are K2 extra fields and can be changed in Components > K2 > Extra Fields

"Rate this item" function can be switched off in the K2 category's settings.
